I get a pony on iOS 4.3 and Lion + Safari 5.1.

The emoji characters are outside the basic multilingual plane, which means that when represented in UTF16 they require two words of storage where most characters take one. The presence of two boxes on your display suggests that there's some UTF16-related breakage somewhere: something is assuming all characters are in the BMP.
